Replace 23 year old galvanized plumbing?

Question: I recently bought a 23 year old house which has galvanized steel water pipes. I was toying with the idea of having them entirely replaced (presumably with copper), as the pressure is low in various spots and the taste is less than stellar (hard water + presumably corrosion going on). Sure, there are other approaches (reverse osmosis filter) for the taste, but they seem rather stopgappish to me - and as we are going to replace 1 bathroom, we already have to have a plumber out. The house is built over a crawl space and is one story, and I live in a moderate climate (I'd say we see freezing weather perhaps 2-3 weeks a year. What should I consider when requesting bids for this job? Any gotchas? Any other materials or techniques to consider other than just outright replacement?

Answer: -I just recently replumbed my 1 story ranch home with Aquapex myself. Cost me around $400 including rental of expander tool and heat gun. -But getting it done that way takes the fun out of it. Its the 3:30am trips to the 24 hour Home Depot for that bag of elbows where you run into the other midnight plumbers thats the good part.
